Meatless Dinners present no challenge whatsoever to me, if only because this is the way we eat at home most weekdays. Fish, salad, soup, vegan high protein pasta, veggie burgers, dairy-free desserts? Yes, gimme!

At the risk of sounding like a goodie goodie to my readers, or worse, smug, I would say, of course I love me a delicious piece of roast chicken and the occasional juicy steak. But Meatless Dinners is where you can bring all your creativity to bear for high protein, comparatively inexpensive, super nutritious and delicious meals.

The Nine Day Meatless Dinners “Challenge”

So sorry but I do not find it a challenge at all.
I often see the same kind of anxiety, albeit for different reasons, set in on the eve of Passover. Just take a look at my giant Seder Menu and Recipe File, and you will see you need not have worried for a moment about what you will eat on Passover in the absence of wheat and other grain products!
I need no excuse and no restrictions to gravitate to the fabulous menus listed below, complete with Recipes. Not only that: I am purposely selecting only one dairy meal, only one fish meal, one Moroccan Vegetarian meal, and one all-vegan meal. With this wide range of selections, I doubt you will find yourself at a loss for what to make for dinner, not just for the Nine days but for any day of the year.

All menus below include a cold soup, just because I find that soup tends to get overlooked during the summer, so here are four delightful cold soup, one for each menu!
