Trust us- our favorite and flavorful beet recipes cannot (and will not) be beat! It is unfortunate that in America beets invariably conjure up pointed remarks like, ummm, never mind! That’s why we’re so happy to prove to you that our beet recipes are both fool-proof and delicious! Vacuum-Packed Roasted Beets have become increasingly available, peeled, kosher for Passover, all natural, well priced, and fabulous. This is great news, as beets’ long cooking time often acts as a deterrent. With this option, you will be encouraged to use them more often, as I do: in salads, smoothies, soups and desserts.

Low in fat and calories, beets are the amazing and richly colored superfood that we love to incorporate into as many recipes as possible. Swiss chard and beets are a wonderful match, as the briny kick of the Swiss chard set off the sweetness of the beets so nicely. A deceptively simple, and unpretentious but delicious little salad you might get as attached to as I am. I often use it in a larger dish, part of a main course rice bowl.
