Overnight Oats are RAW!
In my overnight oats, there’s no cooking and no mess whatsoever. The resulting pudding is, just like Kathy Hester says, OATrageous!
The old fashioned oats get ample time to soften during the few hours’ soaking, and get as soft as if they were actually cooked on a stovetop.
Below is the basic recipe just as I made it in my tinkering with old fashioned oats, and I will include all variations. The chia seeds contribute a pleasing viscosity to the final texture, and are a worthwhile match for the oats on every count: cute look, flavor, texture, amazing nutritional contribution. Try golden chia seeds too! Same nutritional contents as dark chia, but the look more pristine. One more little you might really enjoy about chia seeds: like flax seeds, they greatly help with regularity, which, for many of us, is the holy grail.
Ingredients
For One Serving
Making more servings? Just multiply all ingredients, including the added variations, by as many servings as you need.
- 1/4 cup old fashioned oats
- 1 cup milk or dairy-free milk (soy, rice, almond, cashew etc...)
- 2 tablespoons chia seeds, dark or white
- 1/4 cup golden raisins
- 1 teaspoon maple syrup, or a drop more to taste
- 1-2 teaspoons ground cinnamon
Instructions
Stir all ingredients in a pint size glass mason jar, and close the lid. The mixture will look very liquidy. That's OK, overnight the steel-cut oats and chia seeds will have absorbed all the liquid.
In the morning, the mixture will be thick and creamy, and ready to serve. If you like your pudding a little thinner, stir a little liquid into it.
Variations: Play with all the possibilities and get an exciting dessert each time!
Keeping the oat/liquid 1/4 ratio at all times:
- Throw in some coarsely ground almonds
- Throw in some unsweetened grated coconut
- Substitute other dried fruit for the raisins, but chop it first: Apricots, dates, prunes etc...
- Substitute flax seeds for the chia seeds
- Throw in pumpkin or sunflower seeds
- Throw in a teaspoon cocoa powder.
- Stir in a little Greek yogurt at serving time
- Stir in some berries or chopped banana at serving time

Levana that question about why is the chia pudding left out at room temperature I meant to say steel cut oats pudding why do you indicate to leave it at room temperature won’t it spoil?
