Date power bars is all your perfect-snack and mini meal prayers answered. Easy versatile gluten-free naturally date-sweetened treats, as nutrition-packed as mini meals. I worked hard on developing these bars and they finally came out perfect: firm and crunchy. High protein and high fiber, and super delicious and nutritious.

Commercial Power Bars Are NOT the Healthy Snacks They Are Cracked Up To Be!
I am sorry to have to say this, but I think you should be aware of it! Have you ever taken the time to read the ingredient list in most commercial brands of power bars?
By contrast, just look at this lineup of ingredients in my date power bars: Why even bother shopping for snacks, if ten minutes of work will get you dozens of these scrumptious power bars? Each one is like having a meal: You just can’t miss! When I am on the road, they are my best friends. They keep very well, in a tin or in the freezer, no need to wipe them all out, so behave yourself please, and save some for later, and for your buddies! I know it’s hard to keep your hands off these treats, but the freezer is always great help. Talk about the perfect back to school treats!

You will find several variations below, including one I make all the time and love, with just dates, toasted nuts and orange flower.
Date Lovers, Use Pure Date Paste
I love the Date Lady product line
Amazingly convenient, this brand uses only date as sweetener, always available, well priced, super short ingredient list. The date paste has a single ingredient: dates. All pitted, soft, plump and good to go in a sauce or smooothie or these date power bars.
Nothing beats homemade granola!

My granola recipe has no sugar. It is pretty awesome, and comes with several variations to suit your preferences, and to vary from one delicious granola to another. I even sprinkle granola on salads! Send your kids to schools with little baggies of granola, and you got yourself the perfect snack!
Ingredients
I start with this basic mixture: this one is my great favorite. All ingredients are easily ordered online. You will love the super high protein ready to use roasted lupin flour. With the coconut oil, they come out super firm.
Mix and match from all the variations I am listing below.
Makes about 72 1 1/5 “ cubes, or 36 bars
- 1 2.2 pound package of pure date paste, cut open and softened in the microwave for 1 minute
- 1 cup coconut oil, softened in the microwave for 1 ni buté until liquid
- 1 cup finely ground pumpkin seeds (buy them ready ground!)
- 1 cup finely ground sunflower seeds (buy them ready ground!)
- 1 cup roasted lupin flower
- 1 cup PB2 peanut protein with Dutch cocoa
- 2 cups roasted chopped almonds
- 2 cups dark roasted sesame seeds
- 1 teaspoon salt
Instructions
Mix all ingredients thoroughly in a bowl. Press the mixture very firmly about 1’ high in a greased cookie sheet.
Refrigerate until firm. Cut into 1x3 inch bars, or 1 1/5 inch cubes. You could also shape the mixture into logs, wrap the logs tightly in plastic wrap, refrigerate or freeze the logs, and slice as needed, even straight out of the freezer. Store refrigerated in airtight tins.
Variations:
- Substitute 4 cups granola for the nuts and seeds.
- Throw in 1 cup unsweetened grated coconut
- Substitute other ground seeds or nuts for the ground pumpkin and sunflower
- Substitute unflavored collagen powder for the PB2
- Coat with ganache: microwave 1 cup dark chocolate chips with a little full-fat coconut milk and a little oil, mix thoroughly and let cool a few minutes before spreading all over the top of the mixture.

Ha! That’s what I call UFOs (unidentified frozen objects)! You had a good experience. I recently had a reverse instance: I thought I was thawing a container of chocolate sauce, whose label had fallen off in the freezer, and it turned out to be…. cholent! Of course I love cholent, only not for dessert!
They are the best: Make sure you keep them refrigerated so they don’t lose their texture!

A funny thing happened at my RH lunch table. I served what I thought was broccoli soup (it had been frozen and the label fell off). But it tasted over the top delicious. Everyone wanted the recipe.
