Intimate Brunch party chez moi!

Special birthday brunch for a very special friend for a super special significant (round) number.

I wanted the brunch to be, not just about birthday presents, but a celebration of all the foods and the dishes we love. One of the perks of aging is, you finally hunker down to your favorite foods, and your favorite friends, with considerably less inhibitions and fears of the politically correct world. About time, I might add!

In my friend’s honor, from one salad lover to another, I composed the wonderful salad I am including here. To make it even more outrageous, I made it with my raspberry vinaigrette)

Our friend Georganne made a wonderful Coconut Flatbread.

It is very easy to make, easy to double, and gluten-free. Here is my friend’s recipe, in her own words:

2 tbsps psyllium husk
1/2 cup coconut flour
1 Tbsp potato starch or gluten free flour
1 tsp salt
1 tbsp coconut oil
1 cup hot water
Optional: your favorite seasonings, short and sweet selection: roasted garlic, rosemary, zaatar etc…
Mix all ingredients well in food processor.  Flatten and bake at 375 on parchment — 30 minutes–flip over and bake another 30 min or until browned.

My friend being a chocoholic lifer, choosing dessert for my brunch was a no brainer.

So: Chocolate cake and chocolate-dipped strawberries, end of story.
