Cold Kiwi Honeydew Soup Recipe
My cold honeydew soup is a real triumph.
We are really taking honeydew places! Fantastic flavor lineup for this summer treat.
The tart kiwi is a perfect counterpoint for the sweeter honeydew.
White grape juice acts as a “broth” in this composition; along with honeydew it offsets the tart flavors of kiwis and grapes. The mint brightens up the whole mixture. Please don’t throw in any fruit that will alter in any way the lovely pale green color of the soup (in other words, no berries, mangoes, etc).
My cold honeydew soup is a real triumph.
So little work, so much taste and presentation! You can even get a little naughty and spike it: simply throw 1/2 cup vodka into the whole batch.
Ingredients
- 1 large honeydew melon, peeled and cubed
- 6 ripe kiwis, peeled and halved
- 3 cups green grapes
- ½ cup fresh lemon or lime juice
- 2 tablespoons lemon zest
- 1 cup mint leaves, packed
- ¼ cup maple syrup, or a little more to taste
- 4 cups pure white grape juice
Instructions
Blend all ingredients in batches in a blender until perfectly smooth. Thin the soup if necessary with a little more grape juice. Serve chilled. Garnish each bowl with a nice mint sprig and a slice of lime.
MNakes a good dozen servings
