Turkey Meatloaf Florentine

I’m always trying to find new ways to get extra vegetables into my family’s meals.  Meatloaf is an all American favorite meal for adults and kids.  I know it’s loved around this household.  I decided to change up my normal meatloaf recipe by adding spinach and a few other ingredients.  Everyone loved it so much that we didn’t even have any leftover for sandwiches the next day.  I’m not sure what I like more the meatloaf or meatloaf sandwiches.  This I do know next time I will be doubling the recipe to ensure I get my meatloaf sandwich.  I hope you enjoy this recipe as much as we did.

Ingredients:

  • 1 pound ground turkey
  • 1 cup Italian bread crumbs
  • 1 T. Worsherire sauce
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 1 large egg
  • 1 10 ounce box frozen spinach, thawed and drained
  • 3/4 cup part-skim grated mozzarella
  • ¼ c. parmesan cheese
  • salt and pepper for seasoning

Directions:

  1. Sauté onions and garlic in olive oil for couple minutes just to tender crisp
  2. Mix turkey, bread crumbs and egg in a large bowl, using your hands works best
  3. Add onions and garlic and Worsertire sauce and combine
  4. Mix in spinach, mozzarella and parmesan
  5. Place mixture in a standard size loaf pan.
  6. Bake at 350 degrees for 45-55 minutes.
